A sauce made from sun-dried tomatoes.
Tomato sauce and I have a love-hate relationship. I’ve gone through phases where I loved it, and phases where I hated it. More recently, it’s been more of an acquaintance, where I like a modest amount of it.
I think part of the reason I’m not a fan of regular tomato sauce (meaning the jarred and canned stuff), is because it’s usually filled with sugars, or its packed into cans where there is no mention of BPA on the label.
I definitely prefer tomato sauce in glass jars for this reason, but finding a good quality one that doesn’t cost an arm and a leg can sometimes be a challenge.
Sun-dried tomatoes have always been one of my favorite Italian foods, so whenever I get a chance, I like to add them to meals, but usually they’re just a small part of the meal. I decided to experiment with a sauce made almost entirely from sun-dried tomatoes and this was the delicious outcome!
It’s really that easy?!
It couldn’t be more simple to make and if you are a fan of sun-dried tomatoes, then you will DEFINITELY be a fan of this deliciously chunky and super flavorful sauce.
Making it is also incredibly simple. You’ll need a jar of sun-dried tomatoes in olive oil (I like the Bella Sun Luci brand), some salt, pepper, fresh garlic (mince beforehand) and Italian seasoning. Simply blend it all together and you’re good to go.
If your blender struggles (sun-dried tomatoes can be hard to blend), you can add in more olive oil, as needed to get it to blend better.
If you like your sauce chunky, simply blend for a short amount of time. This is the way I like my sauce, as you can see from the pictures!). If you want more of a smooth consistency, simply blend until that is achieved.
What are some additional ingredients to really boost the flavors?
Oh, there are so many options! Fresh basil and parsley would be excellent, as would some Parmesan cheese (obviously not vegan or Whole30 compliant). You could also add in some heavy cream to make it into a creamy pasta sauce (also not vegan or Whole30 compliant).
I don’t have a regular blender, can I make this with an immersion blender?
Yes, you can. I was able to myself, but I did need to add some additional olive oil to get it to blend. Depending on the power of your immersion blender, you might have trouble, but just keep adding oil until you get it to blend.
