Crunchy things are so difficult to come by on a grain-free diet. If you think about it, the crispy comfort foods of yesteryear are almost entirely wheat or corn based. Cheese crackers, tortilla chips, delicious French bread with a slightly crisp crust. These are all joys of life that the grain-free crowd, such as myself, no longer get to experience.
Good crunchy foods are so hard to come by, but sometimes you just need to satisfy that urge for a crispy crunch between your teeth. These delicious low carb cheese tostadas help to satisfy that occasional urge for some crispy goodness.
If this doesn’t qualify as grain-free comfort food, I’m not sure what would. These low-carb cheese tostadas are great for those nights where you just need a meal that feels like a big hug. The crunch is so great that it briefly made me contemplate eating an actual tostada. Perhaps one day I will figure out how to make one that is just as crunchy as a corn tortilla.
I do recommend the Siete brand tortilla chips, which are grain-free, but I find that they are just too salty for my taste, plus they are downright expensive. Definitely an occasional treat, rather than a weekly meal.
These cheese tostadas are so simple to make too. All you need to do is create several cheese rounds on a non-stick baking sheet, and pop them into the oven. I find that a silicone baking mat, such as the Silpat brand, works great for this, and makes cleanup a breeze.
While the tostadas are baking, you will want to watch closely so they do not burn. I used cheddar cheese, which I find works well for this. I previously tried a mixture of cheeses, some sort of taco blend, which did not work quite as well. One of the types of cheese got a bit burnt.
You will want to watch closely while they cook, because there is a fine line between getting the middle crispy, and the edges getting burnt. If you take them out of the oven a little early, and the middle is not yet crispy, these can instead be turned into taco shells.
Simply fill them while they are lying flat, then bend them when you go to pick them up. They’re delicious either way!

Low Carb Cheese Tostadas (Keto, Gluten-Free, Grain-Free)
Ingredients
- 1 cup cheese of your choice. I find that cheddar works well.
- Ingredients of your choice for topping the tostadas
Instructions
- Preheat oven to 350F.
- Place cheese in circles on a non-stick baking sheet (a silicone baking mat works wonderfully here), approximately 4" in diameter. This recipe should make 4-6 tostadas, depending on the size
- Place in oven for 8-12 minutes. You want it to get crispy in the center, but not so much so that the edges begin to burn.
- Remove from oven and allow to cool for 5 minutes.
- Top with ingredients of your choice and enjoy!
